Chipotle is not a plant variety itself, but a jalapeno pepper that has been allowed to ripen until red and is then naturally dried and smoked. This process gives it its characteristic dark color and potent smoky wood flavor.
We work with the most demanded formats in the hospitality industry: 'Chipotles in Adobo' (whole peppers preserved in a tomato and vinegar sauce), chipotle puree or paste (ideal for quick mixing), and ready-to-serve emulsion-type sauces.
It has a medium heat level (between 2,500 and 8,000 Scoville units), similar to fresh jalapeno. However, its main culinary value is not the heat, but the enormous aromatic depth and 'barbecue' flavor it brings to dishes.
It is the perfect ally to create the famous 'Chipotle Mayo' (mixing it with mayonnaise for burgers or fries). It is also spectacular blended into marinades for ribs, chicken wings, or to add punch to traditional Mexican stews like Chicken Tinga.
Thanks to its adobo base (which contains vinegar and spices), chipotle preserves excellently. Once the industrial container is opened, we recommend transferring it to an airtight plastic or glass container and keeping it in the refrigerator, where it will last for weeks in perfect condition.
