Cut the salmon into cubes and marinate in soy sauce, kimchi sauce, lemon juice, a pinch of sugar and grated ginger; leave to rest for 10 minutes.
Meanwhile, cut fresh carrots into thin julienne strips and chop the spring onions; separate the leaves from the lettuce hearts, wash them, dry them and set aside.
To assemble the sushi, place a portion of the marinated salmon on top of a lettuce leaf, add the carrot, wakame and spring onion, and garnish with sesame seeds and shichimi togarashi.
