Grill the Cajun chicken breast, then shred it once cooked. Cut the tortillas into triangles and fry the tortilla chips; once ready, remove them from the fryer and mix with the Mexican red sauce. Place the chilaquiles on a plate, topped with sour cream, diced avocado, shredded chicken breast, pickled onion, coriander and crumbled feta cheese.
