Baked Salmon with Chimichurri

Mix the potatoes with plenty of Atlanta chimichurri sauce.
Season the salmon fillet with salt, pepper, extra virgin olive oil and lemon juice.
Place a layer of potatoes in an ovenproof dish, top with the salmon fillet, brush with Atlanta chimichurri sauce and bake in the oven for 20 minutes at 180°C, until the salmon is cooked to perfection.
Serve, garnished with parsley, chopped spring onion and lemon zest.
