Heat some olive oil in a frying pan, add the peppers and fry for a few minutes. Next, add the sweet paprika and cumin, fry for a minute, then add the passata. Leave to simmer for 5 minutes, then add the eggs. Cook for 2 minutes, ensuring the egg yolks remain runny. Remove from the heat and stir in the sour cream. Serve garnished with coriander and mint leaves.
