Defrost all the ingredients and arrange them on top of the cooked rice, alternating the ingredients and their colours.
Preparation of the rice: rinse the rice several times in cold water until the water runs clear. Cook 1 part rice to 1½ parts water for 10 minutes on a high heat, 5 minutes on a low heat, and 10 minutes with the heat off and the lid on. While still hot, add the rice vinegar, sugar and salt, stir and leave to cool. Serve with soy sauce.
