Cook the basmati rice in salted water until it is just al dente. Grease a baking dish with a layer of butter, then add a layer of rice and a mixture of saffron or turmeric water. Add a layer of caramelised onions, followed by another layer of rice. Place over a low heat until a thin, slightly crispy crust forms. Remove from the heat and turn out onto a plate. Add dried cranberries, chopped pistachios, parsley and chopped almonds.
