We make salmorejo in the traditional way using fresh garlic, country bread, extra virgin olive oil and fresh tomatoes. We cut the cod into thin slices. We dice a kiwi into small cubes and slice the red cabbage into thin strips. We place the salmorejo at the base of the plate, topped with the slices of fresh cod, the kiwi and the red cabbage. We place a flake of salt on top of each slice of cod and drizzle with extra virgin olive oil.
