Refried Bayo Beans
The Bayo bean is a variety also called ""Flor de Mayo"". Refried beans are a typical Mexican side dish in which beans are cooked in a pot and then ground and ""fried"" in lard or oil.
They can be used as a filling or as a side dish to accompany eggs or omelettes with rice and vegetables, and of course tortilla chips.
